Health Benefits of Elderberry
Elderberries are a super food containing high levels of Vitamin A, B, and C.

Medicinal Elderberry Syrup
4 C. Elderberry Juice
1/3 C. Raw Honey (or to taste)
2 inch Cinnamon Stick
2 Slices Lemon
2 TBS Ginger
Remove frozen berries from stems
Juice berries in steamer
Put juice in pot on stove w/ cinnamon stick, cloves, and lemon.
Strain out lemon and spices
Allow to cool, then put in raw honey while still warm
Pour into clean bottles and store in fridge or can.
Chia Seed Elderberry Jam
6-7 TBS. Chia seeds
2 ½ C. Elderberry Juice
Juice from ½ a lemon
7 TBS Raw Honey (or to taste)
1 TBS Vanilla Extract
Bring Elderberry juice to boil
Add Chia seeds and stir for 1 minute
Add freshly squeezed lemon juice
Remove from heat, allow to cool then add vanilla and honey
Pour into clean jar, and place in refrigerator overnight to allow jam to thicken
Traditional Elderberry Jelly (Recipe from Ball – Complete Book of Home preserving)
3 C. Elderberry Juice
4 TBS. Lemon Juice
1 package (1.75 oz) regular powdered fruit pectin
4 ½ C. granulated Sugar
In a large, deep stainless steel pot, pour in elderberry juice and lemon juice. Whisk in pectin until dissolved. Bring to a boil over high heat, stirring frequently. Add sugar all at once and return to a full rolling boil, stirring constantly. Boil hard, stirring constantly, for 1 minute. Remove from heat and quickly skim off foam.
Quickly pour hot jelly into jars, leaving ¼ inch of headspace. Either bottle, freeze, or refrigerate.
